Fried or grilled meat – Which one is healthier?

Most people think that grilled meat is healthier than fried meat because it contains less fat.

This is a misconception, as steaks and other meat options, but also fish, when fried do not absorb fat.

On the contrary, they eliminate fat, just as they do when we grill them. This can easily be seen when cooking sausages in a non-stick pan, without oil or water: meat eliminates fat. This is exactly what happens when the meat is fried in oil.

Experts advise not to eat fried meat, poultry or fish, not because they absorb more fat.

If you serve them without the fat left in the pan and without adding butter or anything else with a lot of fat, their total fat and calories will not increase to unhealthy levels.

What happens, writes onmed.gr, with frying, is the exposure of meat to very high temperatures, which results in the creation of advanced glycosylation by-products, a group of substances that have been associated with increased levels of inflammation in the body.

Inflammation seems to increase the risk of heart disease and diabetes, while at the same time reducing the body’s natural defenses and accelerating aging.

As for fish, it is better to eat them grilled or boiled, because these cooking methods leave their precious omega-3 fatty acids intact.
